Ingredients

  • 4 large ears of corn, husked and silks removed
  • 4 strips of bacon, halved lengthwise
  • 6 tbsp unsalted butter, softened
  • 2 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste
  • 1/2 cup shredded smoked gouda cheese

Instructions

  1. Preheat your grill to medium high heat (350°F).
  2. Wrap each corn ear with 2 halves of bacon, starting from the bottom and working upwards. Secure the ends with toothpicks.
  3. Grill the bacon wrapped corn for 8 minutes on each side until cooked through and crispy.
  4. In a small bowl, mix together softened butter, minced garlic, chopped parsley, salt, and pepper.
  5. Remove corn from grill, brush with garlic herb butter generously. Sprinkle smoked gouda cheese evenly on top of each ear of corn.
  6. Place corn back on the grill for 2 3 minutes until the cheese is melted and slightly bubbling.
  7. Let rest for a minute, remove toothpicks, and serve immediately.
