Ingredients
- 8 large ears corn, shucked
- 1 cup mayonnaise
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground cumin
- Salt and pepper to taste
- 1/3 cup grated Parmesan cheese
- 16 wooden skewers
Instructions
- Preheat the grill or grill pan to medium high heat. In a small bowl, mix together the mayonnaise, smoked paprika, chili powder, cumin, salt, and pepper. Set aside.
- Brush each ear of corn with half of the prepared mayo mixture, making sure to coat all sides evenly. Sprinkle grated Parmesan cheese over each ear of corn.
- Place the coated corn on the preheated grill or grill pan and cook for 5 7 minutes, turning occasionally until golden brown and charred in spots.
- Remove the cooked corn from the grill and let it cool slightly. Using a sharp knife, slice off the kernels from the cob.
- Thread the sliced corn onto skewers, leaving enough space between each kernel for a perfect bite.
Chef’s Insight
To get that perfect char on your corn, don't be afraid to crank up the heat! But always keep an eye on them so they don't burn.
Notes
Be sure to use fresh corn for best results. If using frozen corn, thaw it completely before adding it to the mayo mixture.
