Instructions

  1. Soak wood chips in water for at least 30 minutes to prevent burning.
  2. Preheat your grill or smoker to medium high heat, approximately 350°F (175°C).
  3. Pat chicken thighs dry with paper towels and season generously with the Carnival of Flavors BBQ Dry Rub on both sides.
  4. Place soaked wood chips directly on the hot coals or in a smoker box, and place the grate back on the grill. Allow the wood chips to smoke for about 5 minutes before placing the chicken thighs on the grill.
  5. Grill the chicken thighs with the lid closed, turning occasionally, until they reach an internal temperature of 165°F (74°C), approximately 20 25 minutes.
  6. During the last 5 minutes of cooking, baste the chicken thighs with the Smokin' Carnival Sauce and continue to cook, basting occasionally, until the sauce has thickened and the chicken is fully cooked.
  7. Remove the chicken from the grill and let it rest for about 5 minutes before serving. Carnival of Flavors BBQ Dry Rub Ingredients:

  9. 1 tablespoon ground black pepper
  10. 1 tablespoon brown sugar
  11. 1 teaspoon ground cumin
  12. 1 teaspoon garlic powder

  15. 1 teaspoon dried oregano
  16. 1 teaspoon salt Smokin' Carnival Sauce Ingredients:

  18. 1/4 cup apple cider vinegar
  19. 1/4 cup water
  20. 1/4 cup brown sugar
  21. 2 tablespoons molasses
  22. 1 teaspoon Worcestershire sauce
  23. 1 teaspoon paprika
  24. 1 teaspoon garlic powder
  25. 1/2 teaspoon ground cumin
  26. 1/2 teaspoon onion powder
  27. 1/4 teaspoon cayenne pepper (optional)
