  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your grill to medium heat, around 350°F (175°C).
  2. Lay out 4 slices of bacon on a flat surface, overlapping them slightly to create a grid pattern.
  3. In a large bowl, combine ground beef, cream cheese, BBQ sauce, hot sauce, onion, bell pepper, salt, and black pepper. Mix until well incorporated.
  4. Spread the meat mixture evenly over the bacon grid, pressing gently to adhere.
  5. Roll up the bacon covered meat into a tight log, using additional bacon slices if needed.
  6. Wrap the rolled meat log in the remaining 4 slices of bacon, ensuring the seams are sealed.
  7. Place the bacon wrapped meat log on the preheated grill and cook for 1 hour or until the internal temperature reaches 165°F (74°C). Baste with additional BBQ sauce every 10 minutes during cooking.
  8. Remove from the grill, let rest for 5 minutes, then slice and serve.
