  • 8 slider buns, split and lightly toasted

Instructions

  1. In a small bowl, mix together paprika, garlic powder, onion powder, ground cumin, salt, and pepper. Rub the mixture evenly onto both sides of the chicken thighs.
  2. Preheat your grill or smoker to medium high heat (about 350°F). Grill the chicken thighs skin side down for 4 6 minutes, then flip and grill for another 4 6 minutes until fully cooked and reaching an internal temperature of 165°F.
  3. Remove the chicken from the grill and let it rest for a few minutes. While the chicken is resting, generously brush both sides with your favorite Carolina BBQ sauce. Return the chicken to the grill and continue cooking until the sauce is thickened and slightly charred, about 2 3 more minutes per side.
  4. Remove the chicken from the grill and let it rest for a few minutes before shredding or cutting into smaller pieces.
  5. Assemble the sliders by placing a piece of chicken on the bottom half of each bun, topping with additional BBQ sauce, your choice of optional toppings, and finally the top half of the bun.
