1. 2 cups fresh mixed berries (strawberries, raspberries, blueberries, and blackberries) 2. 1 can (13.5 oz) coconut milk 3. 1 tbsp honey or agave syrup 4. 1 tsp dried culinary lavender 5. Crushed ice 6. Fresh mint leaves for garnish
Instructions
In a blender, combine the mixed berries, coconut milk, and honey or agave syrup. Blend until smooth.
Pour the berry mixture through a fine mesh strainer into a large measuring cup to remove any seeds.
Divide half of the strained berry mixture evenly among 4 tall glasses, filling them halfway up.
Place the lavender in a spice grinder or coffee grinder and pulse until coarsely ground. Stir the ground lavender into the remaining berry mixture.
Pour the lavender infused berry mixture over the initial layer of berry mix in each glass, filling them to the top.
Gently stir each glass with a spoon or a bar spoon to create a beautiful marbled effect.
Add crushed ice to each glass and garnish with fresh mint leaves.
Chef’s Insight
The use of coconut milk gives this drink a creamy, luscious texture without being heavy, while the lavender adds a sophisticated note that pairs perfectly with the sweetness of the berries.
Notes
Be sure to use fresh, ripe berries for the best flavor. Adjust the sweetness according to your taste by adding more or less honey or agave syrup.
