  • purpose flour
  • 3/4 cup almond milk
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup vegetable oil
  • 1 cup unsweetened cocoa powder
  • 1 cup pitted cherries, halved
  • 2 cups vegan whipped cream
  • 1/2 cup chocolate shavings

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8 inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt. Gradually add almond milk and vegetable oil, mixing until smooth.
  3. Pour batter into the prepared cake pan and bake for 25 30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.
  4. Place a layer of halved cherries on top of the cooled cake, then spread a generous layer of vegan whipped cream over the cherries.
  5. Sprinkle chocolate shavings on top, and serve chilled.
