Ingredients

  • 2 cups full
  • fat coconut milk
  • 1/2 cup almond milk
  • 3/4 cup cane sugar
  • 1 tbsp cardamom, ground
  • 1/2 tsp saffron threads
  • 2 tsp agar agar powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • Garnish: pistachios, toasted and chopped
  • edible flowers

Instructions

  1. In a saucepan, combine coconut milk, almond milk, sugar, cardamom, and saffron threads. Gently heat on low until the sugar dissolves and flavors meld together. Stir occasionally with a silken touch.
  2. In a small bowl, mix agar agar powder with 1/4 cup water. Once dissolved, add to the saucepan and raise heat to medium. Cook for 5 minutes, stirring constantly to avoid lumps.
  3. Remove from heat, strain mixture if necessary, and whisk in vanilla extract and salt. Let cool for 2 minutes.
  4. Pour mixture into two elegant serving dishes or ramekins, allowing space for the panna cotta to set. Refrigerate uncovered for at least 5 hours or overnight until firm.
  5. To serve, garnish with a sprinkle of toasted pistachios and delicate edible flowers.

Chef’s Insight

The agar agar gives a subtle crunch while the coconut milk offers a rich, luxurious texture.

Notes

Agar agar is a vegan alternative to gelatin for setting the panna cotta.
