Instructions

  1. In a saucepan, combine sugar, water, cornstarch, and rosewater. Cook over medium heat until the mixture thickens and becomes a satiny mass.
  2. Stir in lemon juice and let cool for 5 minutes. Divide the mixture into two separate bowls.
  3. Add a few drops of red food coloring to one bowl and yellow to the other, mixing thoroughly.
  4. Working quickly while the mixtures are still warm, shape each colored mixture into small oblong bites, roughly 1 inch long.
  5. Press a pistachio onto the top of each bite for added texture.
  6. Place the bites on parchment paper and allow to cool completely.
  7. Melt coconut oil in a microwave safe bowl and stir in the white chocolate chips until fully combined and smooth.
  8. Dip each bite into the melted white chocolate, coating completely, and return to the parchment paper.
  9. Allow the coated bites to set in the refrigerator for 15 minutes or until firm.
