  • 4 cups apple juice, freshly pressed 2 cups water, boiling 1/2 cup raw honey 1 cinnamon stick 6 whole cloves 1 star anise 1 small lemon, juiced 1 orange, zested and juiced 1 bottle (750ml) dry sparkling white wine, chilled Fresh berries and citrus slices for garnish

Instructions

  1. In a large saucepan, combine apple juice, honey, cinnamon stick, cloves, and star anise. Bring to a simmer over medium heat, stirring occasionally to dissolve the honey. Remove from heat and let steep for 30 minutes.
  2. Strain the infused liquid into a pitcher, discarding the solids. Add lemon juice and orange zest and juice to the pitcher. Chill the mixture until cold.
  3. Just before serving, gently stir in the sparkling white wine, being careful not to disturb any foam that may have formed on the surface. Pour the punch into individual glasses, garnishing each with a berry and citrus slice.
