Ingredients

  • 1. 2 cups fresh strawberries 2. 1 cup fresh rhubarb, chopped 3. 1/4 cup maple syrup 4. 2 cups soda water 5. 1/2 cup coconut cream 6. Ice cubes 7. Fresh mint leaves for garnish 8. Edible flowers for garnish (optional) 9. Lime wedges for garnish (optional)

Instructions

  1. In a saucepan, combine strawberries and rhubarb. Gently cook over medium heat until the fruits soften and release their juices. Stir in the maple syrup, and let the mixture simmer for 5 minutes, or until it thickens slightly. Remove from heat and allow to cool.
  2. In a blender, puree the cooled fruit mixture until smooth. Strain through a fine mesh sieve into a bowl, pressing down on the solids to extract as much liquid as possible. Discard the remaining solids.
  3. Divide the puree among two tall glasses, filling them one third full. Top each glass with soda water, filling the glass about halfway.
  4. In a separate bowl, whisk together coconut cream and a splash of fruit puree until soft peaks form. Gently spoon the whipped cream on top of the soda water in each glass.
  5. Garnish with fresh mint leaves, edible flowers, and lime wedges if desired.
  6. Serve immediately and enjoy this celestial strawberry rhubarb fizz that whisks you away to a sun drenched German summer.
