  • 1 1/2 cups granulated sugar 3/4 cup water 1 1/2 tsp lemon juice 1/2 tsp cinnamon 1/4 cup cornstarch 1/2 cup cold water (for the cornstarch slurry) 1 cup heavy cream 2 tsp rose water Wooden popsicle sticks

Instructions

  1. In a medium saucepan, combine sugar, water, lemon juice, and cinnamon. Stir until the sugar dissolves. Bring the mixture to a boil over high heat, then reduce the heat to low and simmer for 5 minutes.
  2. In a separate bowl, whisk together cornstarch and cold water until fully combined, creating a slurry.
  3. Slowly pour the cornstarch slurry into the saucepan with the syrup, stirring constantly to avoid lumps. Cook the mixture over medium heat for another 5 minutes or until it thickens and starts to coat the back of a spoon.
  4. Remove the saucepan from heat and let it cool slightly. In a separate bowl, whip the heavy cream and rose water together until it forms soft peaks.
  5. Gently fold the whipped cream into the cooled syrup mixture until well combined.
  6. Pour the mixture into popsicle molds, leaving about 1/2 inch at the top for expansion during freezing. Insert wooden sticks and freeze until solid, at least 4 hours or overnight.
  7. Once frozen, remove the popsicles from the mold by running warm water over the outside of the mold for a few seconds, then gently pull them out.
