- ounce) fresh Copper River salmon fillets, skin removed 2. Salt and pepper, to taste 3. 4 slices Monterey Jack cheese 4. 2 tablespoons olive oil 5. 4 hamburger buns, split and toasted 6. 1 cup spicy pepper relish (see recipe below) 7. 1/2 cup tangy dill cream sauce (see recipe below)
Instructions
- Season salmon fillets with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium high heat.
- Place salmon fillets in the skillet and cook for 4 minutes per side, or until cooked through.
- Top each fillet with a slice of Monterey Jack cheese during the last minute of cooking.
- Remove salmon from skillet and let rest for a couple of minutes.
- Assemble burgers by placing cooked salmon on toasted buns, followed by spicy pepper relish and tangy dill cream sauce. Spicy Pepper Relish:
- 3 cups finely chopped bell peppers (red, yellow, or green)
- 1 cup finely chopped red onion
- 1/4 cup red wine vinegar
- 1 tablespoon sugar
- 1 teaspoon salt Tangy Dill Cream Sauce:
- 1 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup chopped fresh dill
- 1 tablespoon lemon juice
- Salt and pepper, to taste
