  • 12 large collard green leaves 1 lb ground pork 1 cup finely chopped white onion 1/2 cup finely chopped carrots 1/4 cup finely chopped bell pepper 2 cloves garlic, minced 1 tbsp fish sauce 1 tsp black pepper 1 tsp salt 1 tbsp coconut oil For the Spicy Peanut Sauce: 1/2 cup natural peanut butter 1/4 cup coconut milk 1 tbsp honey 1 tbsp rice vinegar 1 tsp red pepper flakes 1 tsp fish sauce 2 cloves garlic, minced

Instructions

  1. In a large pan, heat the coconut oil over medium high heat. Add the ground pork, onion, carrots, bell pepper, and garlic. Cook until the meat is browned and the vegetables are tender.
  2. Stir in the fish sauce, black pepper, and salt. Remove from heat and let cool.
  3. Lay out a collard green leaf flat on a clean surface. Place about 1/4 cup of the filling near the stem end of the leaf. Roll up the lumpia, tucking in the sides as you go.
  4. Repeat with the remaining leaves and filling. Cut each lumpia in half and transfer to a serving platter.
  5. In a small bowl, whisk together all spicy peanut sauce ingredients until smooth. Serve alongside the lumpia.
