  1. a. Prepare cauliflower rice by pulsing the cauliflower in a food processor until it reaches a rice like texture. Set aside. b. In a large mixing bowl, combine ground lamb, almond flour, paprika, red pepper flakes, salt, and black pepper. Mix well to form meatballs. c. Heat 2 tbsp of olive oil in a pan over medium heat. Add the meatballs and cook until browned on all sides, about 8 10 minutes. Remove from pan and set aside. d. In another pan, heat 1 tbsp of olive oil over medium heat. Sauté the garlic for 30 seconds, then add the cauliflower rice. Cook for about 5 minutes or until tender. Stir in the spinach and cook until wilted. Season with salt and black pepper to taste. e. To serve, place a generous scoop of mashed cauliflower on a plate and top with spicy lamb meatballs.
