  • 4 skinless, boneless chicken breasts 1 tablespoon olive oil 1 teaspoon each: dried rosemary, thyme, and basil Salt and pepper to taste 2 ripe avocados, halved, pitted, peeled, and sliced 1 small red onion, thinly sliced 4 cups mixed salad greens 1 grapefruit, segmented 1 orange, segmented 1/2 cup fresh blueberries 1/4 cup toasted almonds 3 tablespoons lemon vinaigrette (see recipe below)

Instructions

  1. In a small bowl, mix together the olive oil, dried rosemary, thyme, basil, salt, and pepper. Rub the mixture onto both sides of each chicken breast. Grill over medium heat for 6 7 minutes per side or until cooked through. Let rest for 5 minutes before slicing. Arrange salad greens on two plates. Top with red onion, avocado slices, grapefruit and orange segments, blueberries, toasted almonds, and sliced grilled chicken. Drizzle with lemon vinaigrette and serve immediately.
