  • 6 ice cubes

Instructions

  1. In a medium saucepan, combine coconut milk, almond milk, palm sugar substitute, lime juice, vanilla extract, and lemongrass. Stir gently to mix.
  2. Place the saucepan over low heat and let it simmer for 10 minutes. Remove from heat and allow the mixture to cool completely.
  3. Strain the mixture through a fine mesh sieve into a large pitcher, discarding the lemongrass.
  4. Refrigerate the infused liquid for at least 2 hours or until chilled.
  5. To serve, pour the chilled coconut milk mixture into glasses filled with ice cubes, leaving some room for bubbles. Stir gently and top with lime wheels and mint leaves.
