Ingredients

  • 2 cups fresh coconut milk
  • 4 limes
  • 1 cup sugar
  • 1/2 cup fresh mint leaves
  • Sparkling water
  • Ice cubes

Instructions

  1. In a medium saucepan, combine the coconut milk and sugar over low heat. Stir until the sugar has dissolved completely. Remove from heat and let it cool to room temperature.
  2. Cut 3 of the limes into thin rounds and set aside for garnish. Juice the remaining lime.
  3. In a large pitcher, combine the lime juice, coconut milk mixture, and half of the mint leaves. Stir gently until combined.
  4. Cover the pitcher with plastic wrap and refrigerate for at least 2 hours to allow flavors to meld.
  5. When ready to serve, fill each glass with ice cubes and add a few remaining mint leaves. Pour the coconut lime mixture over the ice, filling each glass about 3/4 full.
  6. Top off each glass with sparkling water and give it a gentle stir. Garnish with the reserved lime rounds and a sprig of fresh mint. Serve immediately.
