  • 1. 2 ripe mangoes, diced 2. 1 can (14 oz) full
  • fat coconut milk 3. 1/2 cup raw cashews, soaked overnight 4. 1/4 cup honey 5. Zest and juice of one lime 6. Pinch of sea salt 7. Fresh mint leaves, for garnish

Instructions

  1. Drain the cashews and blend them with the coconut milk until smooth and creamy. Set aside.
  2. In a separate bowl, mix the diced mangoes, honey, lime zest, and juice. Gently fold in the blended coconut cashew mixture.
  3. Divide the mixture into two individual serving dishes, and refrigerate for at least 4 hours or until firm.
  4. Before serving, garnish with fresh mint leaves.
