  • 8 small corn tortillas

  • 1/2 cup thinly sliced jalapeños
  • 1 lime, cut into wedges

Instructions

  1. Prepare the Chipotle BBQ Sauce by combining all ingredients in a blender and blend until smooth. Set aside.
  2. Season the brisket generously with salt and pepper on both sides.
  3. Preheat your grill to medium high heat (around 375°F). Place the brisket on the grill and cook for 4 minutes per side, or until a nice crust forms.
  4. Reduce the grill heat to low (around 225°F) and move the brisket to indirect heat. Brush the top of the brisket with 1/2 cup of Chipotle BBQ sauce. Close the lid and let it cook for 3 hours, basting every hour with additional BBQ sauce.
  5. Once the brisket is tender and reaches an internal temperature of 200°F, remove from the grill and let it rest for 10 minutes. Slice thinly against the grain.
  6. Heat the tortillas on the grill for 30 seconds per side until they start to puff up.
  7. Assemble the tacos by layering sliced brisket, crumbled queso fresco, chopped white onion, and jalapeño slices in each tortilla. Serve with lime wedges on the side.
