  • 2 racks baby back pork ribs (about 3 lbs)
  • 1 cup barbecue rub (store

  • 1 1/2 cups smoky BBQ sauce (store
  • bought or homemade)
  • 4 ripe peaches, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or oven to 250°F (120°C).
  2. Remove the membrane from the back of the ribs by lifting it with a butter knife and grasping it with a paper towel. Rub the ribs all over with barbecue rub, then wrap them tightly in foil and place on the grill or in the oven for 2 hours.
  3. In a medium bowl, combine diced peaches, red onion, jalapeño, cilantro, lime juice, salt, and pepper. Set aside.
  4. After 2 hours, increase the heat of your grill to 350°F (175°C). Remove ribs from foil, brush with smoky BBQ sauce, and place on the grill. Grill for 10 15 minutes, turning occasionally and basting with more sauce until tender and slightly charred.
