Ingredients
- 1. 2 lbs boneless chicken or steak, thinly sliced 2. 1 packet fajita seasoning mix 3. 1/4 cup olive oil 4. 12 large flour tortillas 5. 2 cups shredded cheese (Mexican blend) 6. 2 cups diced tomatoes 7. 1 large onion, thinly sliced 8. 1 can black beans, rinsed and drained 9. 1 cup sour cream 10. 2 avocados, mashed 11. Lime wedges for garnish 12. Fresh cilantro leaves for garnish 13. Salt and pepper to taste
Instructions
- In a large bowl, combine chicken or steak with fajita seasoning mix and olive oil. Toss until well coated. Cover and let marinate in the refrigerator for 20 minutes.
- Heat a large skillet over medium high heat. Cook the marinated meat until cooked through, stirring occasionally. Remove from heat and keep warm.
- In a separate skillet, heat a small amount of oil and sauté onions and tomatoes until softened. Season with salt and pepper to taste.
- Assemble tacos by warming flour tortillas on a griddle or in the microwave for 10 seconds. Add cooked meat, sautéed onions and tomatoes, black beans, cheese, sour cream, and avocado. Garnish with lime wedges and fresh cilantro leaves.
- Serve immediately and enjoy the sizzling aroma and taste of this unforgettable dinner.
