Ingredients

  • 4 large ears of corn, shucked and cleaned
  • 1/2 cup mayonnaise
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1 cup cotija cheese, crumbled
  • 1 lime, zested and juiced
  • 1/4 cup chopped cilantro leaves
  • 1 jalapeño, thinly sliced (optional)

Instructions

  1. Preheat an outdoor grill to medium high heat or preheat a grill pan on the stovetop.
  2. In a small bowl, mix together the mayonnaise, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper until well combined. Set aside.
  3. Grill the corn on all sides, turning every 2 3 minutes, until the kernels are slightly charred and tender, about 10 12 minutes total.
  4. Remove corn from grill and let cool slightly. Slather each ear of corn with the prepared mayonnaise mixture, then sprinkle generously with cotija cheese.
  5. Finish with a squeeze of lime juice, a pinch of lime zest, freshly chopped cilantro, and jalapeño slices if desired.
