4 fresh pineapples 1 cup dark rum 1/2 cup brown sugar 1/4 cup soy sauce 2 tablespoons honey 2 tablespoons fresh lime juice 1 teaspoon grated ginger 1/2 teaspoon cayenne pepper
Instructions
Slice the tops off of the pineapples and remove any hard outer shell, revealing the fruit inside. Stand each pineapple upright with its base facing downward on a preheated outdoor grill over medium high heat. Grill for 5 minutes or until the pineapple is slightly caramelized.
In a saucepan, combine rum, brown sugar, soy sauce, honey, lime juice, ginger, and cayenne pepper. Bring to a boil, reduce heat, and simmer until thickened, approximately 10 minutes. Remove from heat and set aside.
After grilling for 5 minutes, flip the pineapples using tongs and brush generously with the spicy rum glaze. Continue grilling for an additional 5 7 minutes or until the pineapple is tender and slightly charred. Brush with glaze periodically during this time.
Remove the pineapples from the grill, let them rest for a couple of minutes, then slice into wedges and serve immediately.
