Instructions

  1. Slice the tops off of the pineapples and remove any hard outer shell, revealing the fruit inside. Stand each pineapple upright with its base facing downward on a preheated outdoor grill over medium high heat. Grill for 5 minutes or until the pineapple is slightly caramelized.
  2. In a saucepan, combine rum, brown sugar, soy sauce, honey, lime juice, ginger, and cayenne pepper. Bring to a boil, reduce heat, and simmer until thickened, approximately 10 minutes. Remove from heat and set aside.
  3. After grilling for 5 minutes, flip the pineapples using tongs and brush generously with the spicy rum glaze. Continue grilling for an additional 5 7 minutes or until the pineapple is tender and slightly charred. Brush with glaze periodically during this time.
  4. Remove the pineapples from the grill, let them rest for a couple of minutes, then slice into wedges and serve immediately.
