Ingredients
- 1 lb beef skirt steak or flank steak
- 2 tbsp vegetable oil
- 2 large flour tortillas (for making taco shells)
- Salt and pepper, to taste Marinade:
- 1/4 cup lime juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional) Mango
- Avocado Salsa:
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of one lime
- Salt and pepper, to taste
Instructions
- In a large resealable plastic bag or shallow dish, combine the marinade ingredients and mix well. Add the steak, ensuring it is fully coated in the marinade. Allow the steak to marinate for at least 30 minutes, or up to overnight for deeper flavor.
- Preheat your grill or stovetop grill pan over medium high heat. Remove the steak from the marinade and season with salt and pepper. Grill to desired doneness, approximately 4 5 minutes per side for medium rare. Allow the steak to rest for 10 minutes before slicing against the grain into thin strips.
- Wrap the flour tortillas in foil and place them on the grill or grill pan for 2 3 minutes per side, until they become crispy and golden brown.
- In a medium bowl, combine the mango avocado salsa ingredients. Mix gently to combine and adjust seasoning as needed.
- To assemble the tacos, layer sliced steak on top of the crispy tortillas and generously spoon the mango avocado salsa over the meat. Garnish with additional cilantro or lime wedges if desired.
