Ingredients
4 large ears of fresh corn, husks removed
2 tablespoons olive oil
Salt and pepper, to taste
1 cup mayonnaise
1/2 cup sour cream
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper (optional)
1 cup crumbled blue cheese
2 tablespoons chopped fresh chives
1/2 cup BBQ sauce (your favorite brand or homemade)
1/4 cup crumbled bacon (cooked)
1 lime, cut into wedges
Fresh cilantro leaves for garnish
Instructions
Preheat your grill to medium high heat. Brush the corn with olive oil and season generously with salt and pepper.
Grill the corn for 5 6 minutes per side until charred and tender. Remove from grill and let cool slightly.
In a small bowl, mix together mayonnaise, sour cream, garlic powder, onion powder, smoked paprika, cumin, and cayenne pepper if using. Stir in blue cheese and chives.
Spread the blue cheese mixture evenly over each ear of corn. Then, brush with your favorite BBQ sauce.
Top with crumbled bacon and garnish with lime wedges and fresh cilantro leaves.
Serve immediately.
