1 lb chicken or beef (or substitute for other proteins)
1 tbsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp garlic powder
Salt and pepper, to taste
8 small corn tortillas
1 cup shredded cheese (Monterey Jack or Cheddar)
1 cup sliced red onion
1 jalapeño, thinly sliced
1/2 cup fresh cilantro leaves
1 lime, cut into wedges
Hot sauce, to taste
Instructions
In a large bowl, combine the chicken or beef with chili powder, smoked paprika, cumin, garlic powder, salt, and pepper. Mix well to ensure even seasoning. Set aside for 15 minutes to marinate.
Preheat your grill or stovetop grill pan over medium high heat. Grill the meat until cooked through and slightly charred, approximately 4 6 minutes per side for chicken, or 3 4 minutes per side for beef. Remove from heat and let rest briefly before slicing into thin strips.
Warm corn tortillas on the grill or in a dry skillet for 20 30 seconds per side until slightly charred. Keep warm while preparing tacos.
Assemble tacos by layering sliced meat, shredded cheese, red onion, jalapeño slices, and cilantro leaves in each tortilla. Serve with lime wedges and hot sauce on the side.
