  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 1/4 cup whipping cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a saucepan, combine the mixed berries, erythritol and vanilla extract. Cook on medium heat until the berries release their juices and become slightly thickened. Set aside.
  3. In a large bowl, whisk together almond flour, coconut flour, and salt.
  4. In another bowl, beat egg yolks with cream of tartar until well combined. Fold into the dry ingredients to form a thick batter.
  5. In yet another bowl, whip egg whites with an electric mixer until they form stiff peaks. Gently fold them into the batter.
  6. Pour half of the prepared berry mixture into a greased 9 inch ovenproof dish. Spoon the batter over it and spread evenly. Top with the remaining berries.
  7. Bake for 25 minutes or until the top is golden brown. Allow to cool slightly before serving.
  8. Serve each portion with a dollop of whipped cream.
