2 pounds mixed root vegetables (such as potatoes, carrots, parsnips, and rutabaga), peeled and diced into 1
inch pieces
1 medium onion, finely chopped
2 cloves garlic, minced
2 cups heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons fresh thyme, finely chopped
1 teaspoon ground nutmeg
Salt and pepper, to taste
1/4 cup breadcrumbs
2 tablespoons unsalted butter, melted
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the diced root vegetables and chopped onion.
In a separate small bowl, mix together the minced garlic, heavy cream, Parmesan cheese, thyme, nutmeg, salt, and pepper to taste. Pour this mixture over the vegetables and toss well to coat.
Transfer the vegetable mixture to a greased 9x13 inch baking dish, spreading it out evenly.
In another small bowl, mix together the breadcrumbs and melted butter. Sprinkle this mixture evenly over the top of the vegetable mixture in the baking dish.
Bake for 40 45 minutes or until the vegetables are tender and the top is golden brown.
