Ingredients

  • 1 cup basmati rice 1 medium cauliflower, cut into florets 2 tbsp olive oil 1 tsp ground turmeric 1 tsp ground cumin 1 tsp ground coriander Salt and black pepper, to taste 1 cup frozen peas 2 cups cooked chickpeas 1 can coconut milk 1 lb extra

  • sized pieces 1/4 cup cornstarch 1/2 cup almond flour 2 tbsp nutritional yeast 1 tsp smoked paprika Salt and black pepper, to taste Olive oil, for frying

Instructions

  1. a. Rinse the basmati rice under cold water, then cook according to package instructions. b. In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside. c. Heat 1 tbsp of olive oil in a pan over medium heat. Add turmeric, cumin, coriander, salt, and black pepper, stirring well to combine. d. Add the processed cauliflower rice to the spice mixture, mixing thoroughly. Cover and cook for 5 7 minutes until the cauliflower is tender. Stir in the frozen peas and cook for an additional 2 minutes. Set aside. e. In another pan, heat 1 tbsp of olive oil over medium heat. Add the chickpeas and coconut milk to the pan, stirring well to combine. Season with salt and black pepper, then simmer for 5 7 minutes until the sauce thickens slightly. f. In a separate pan, heat 2 inches of oil to 350°F (180°C). In a shallow dish, mix cornstarch, almond flour, nutritional yeast, smoked paprika, salt, and black pepper. Toss the tofu pieces in this mixture until evenly coated. Fry the tofu bites in the hot oil for 3 4 minutes per side until crispy and golden brown. Remove from pan and place on a paper towel lined plate. g. To assemble, spoon the spiced cauliflower rice onto plates, followed by the creamy chickpea curry. Top with crispy tofu bites and garnish with fresh cilantro leaves.
