Creamy Vegan Dutch Lentil Stew with Wild Rice Pilaf

Instructions
In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5 minutes.
Stir in the cumin, smoked paprika, coriander, salt, and pepper, and cook for an additional 1 2 minutes.
Add the lentils, tomato, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer, covered, for 30 minutes or until lentils are tender.
Meanwhile, prepare the wild rice pilaf according to package instructions.
Once the stew is ready, season with additional salt and pepper if needed, and garnish with fresh parsley. Serve the stew hot over the wild rice pilaf.
