Ingredients

  • 4 fresh ears of corn, husked and silks removed
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/3 cup mayonnaise
  • 1/4 cup crumbled cotija cheese
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground cayenne pepper
  • 1 tablespoon fresh lime juice
  • Optional: 2 tablespoons finely chopped fresh cilantro

Instructions

  1. Preheat your air fryer to 400°F (205°C).
  2. In a small bowl, mix together the mayonnaise, cotija cheese, smoked paprika, cayenne pepper, and lime juice. Set aside.
  3. Brush the corn with olive oil and season with salt and black pepper. Place the corn in the air fryer basket and cook for 8 10 minutes or until the corn is tender and slightly charred.
  4. Remove the corn from the air fryer, let it cool slightly, then slather with the cheese sauce and garnish with optional fresh cilantro. Serve immediately.
