Crispy Gluten-Free Caribbean Fried Plantain Bites with Mango Dip

Ingredients
4 large ripe plantains
1 cup gluten
free all
purpose flour
2 cups vegetable oil for frying
1 cup water
Salt to taste
2 ripe mangoes, peeled and diced
1/4 cup lime juice
1/4 cup chopped cilantro
1 teaspoon ground cumin
1 teaspoon ground allspice
Instructions
Peel the plantains and cut them into bite sized pieces, about 2 inches long.
In a medium bowl, combine the gluten free flour, water, and salt to create a batter. Mix well until smooth.
Heat the vegetable oil in a deep frying pan over medium heat.
Dip each plantain piece into the batter, coating it evenly, then carefully place it into the hot oil.
Fry the plantains in batches, turning occasionally, until they are golden brown and crispy on all sides. Remove from the oil and drain on paper towels.
In a separate bowl, combine diced mangoes, lime juice, chopped cilantro, ground cumin, and ground allspice to prepare the mango dip.
