Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all
  • purpose flour
  • 2 cups panko breadcrumbs
  • 1/4 cup cornstarch
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • Salt, to taste
  • 2 large eggs, beaten
  • Vegetable oil, for frying
  • 4 biscuits, split and toasted
  • 1 cup Secret BBQ Sauce (see recipe below)
  • 2 cups Southern Slaw (see recipe below)

Instructions

  1. In a shallow dish, combine the flour, panko breadcrumbs, cornstarch, paprika, garlic powder, onion powder, black pepper, and salt.
  2. In another shallow dish, beat the eggs.
  3. Dredge each chicken breast in the flour mixture, then egg, and finally, back into the flour mixture to double coat.
  4. Heat about 1 inch of vegetable oil in a deep frying pan over medium heat until it reaches 350°F. Fry the coated chicken breasts until golden brown and cooked through, about 6 minutes per side. Transfer to a paper towel lined plate to drain.
  5. To assemble the sandwich, spread a generous amount of Secret BBQ Sauce on each split biscuit, then top with fried chicken, Southern Slaw, and the remaining biscuit half.
