Instructions

  1. In a large bowl, combine chicken drumsticks with olive oil, lemon juice, cilantro, orange juice, garlic, ground cumin, salt, and pepper. Marinate for at least 30 minutes, or up to overnight.
  2. Preheat the grill to medium high heat. Grill the marinated chicken drumsticks until cooked through and golden brown, about 18 20 minutes, turning occasionally.
  3. For the Garlic Rice, rinse the rice in a fine mesh strainer under cold water. In a large pot, heat olive oil over medium heat. Add saffron threads and let them infuse for 1 minute. Add the rinsed rice and stir to coat. Pour in chicken broth, bring to a boil, cover, reduce heat, and simmer until the rice is tender and has absorbed the liquid, about 18 20 minutes.
  4. In a medium saucepan, combine black beans, diced onion, tomato sauce, salt, and pepper. Cook over medium heat until heated through, about 5 minutes.
  5. To serve, divide Garlic Rice among plates, top with Grilled Mojo Marinated Chicken, and spoon Creamy Black Beans alongside.
