  • 4 tbsp unsalted butter

  • 1 lb fresh green beans, trimmed
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Gluten Free Beef Stroganoff by heating butter in a large skillet over medium heat. Add sliced beef and cook until browned. Remove from skillet and set aside.
  2. In the same skillet, add mushrooms and sauté until tender. Deglaze with white wine and cook for 2 3 minutes. Return cooked beef to the skillet and stir in sour cream. Season with salt and pepper to taste. Set aside.
  3. For the Garlic Herb Mashed Potatoes, boil quartered potatoes in a large pot of water until fork tender. Drain and return to the pot. Add milk, garlic, butter, salt, and pepper, mashing until smooth and creamy. Fold in chopped chives for garnish.
  4. In a separate pan, heat olive oil over medium high heat. Add green beans and cook until tender but still crisp. Season with salt and pepper to taste.
  5. Assemble the dish by dividing mashed potatoes onto two plates, topping with the Gluten Free Beef Stroganoff. Serve sautéed green beans alongside.
