Ingredients

  • 4 layers of chocolate sponge cake
  • 1 cup fresh cherries, pitted and halved
  • 1 cup cherry liqueur (Kirsch)
  • 2 cups heavy cream
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 8 oz semi
  • sweet chocolate, finely chopped
  • 4 tablespoons unsalted butter, softened

Instructions

  1. In a medium bowl, combine cherries and cherry liqueur let them macerate for at least 30 minutes.
  2. In another bowl, whip heavy cream, sugar, and vanilla extract until stiff peaks form. Set aside.
  3. Melt chopped chocolate and softened butter in a double boiler or microwave, stirring until smooth. Allow to cool slightly.
  4. Assemble the cake by placing a layer of sponge cake on a plate, followed by a layer of whipped cream. Spread half of the macerated cherries over the cream. Drizzle with one third of the chocolate ganache and top with another layer of sponge cake.
  5. Repeat steps 4 and 5 until all layers are used.
  6. Finish with a final layer of whipped cream, spreading it evenly over the top. Decorate with the remaining cherries and drizzle with the remaining ganache.
  7. Refrigerate for at least 2 hours before serving to allow flavors to meld together.
