Delectable Gluten-Free Pakistani Breakfast Feast: Aromatic Shahi Tukra with Vegetable Biryani and Mango Lassi

1 cup mixed vegetables (carrots, peas, potatoes), diced
2 cups water or vegetable broth
Fresh coriander leaves for garnish Mango Lassi:
1 ripe mango, peeled and pitted
1 cup yogurt
1/4 cup cold water
2 tbsp granulated sugar
Pinch of salt
Ice cubes, as needed
Instructions
To prepare the Vegetable Biryani, cook the rice according to package instructions. Heat oil in a large pot over medium heat. Add onions and sauté until golden brown. Stir in tomatoes, cumin seeds, turmeric powder, coriander, cinnamon, cloves, black pepper, and salt. Cook for 5 minutes, stirring occasionally.
Add mixed vegetables and cook for an additional 3 4 minutes or until slightly tender. Add rice and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes or until the liquid is absorbed and rice is cooked through. Set aside.
To make Mango Lassi, blend mangoes, yogurt, water, sugar, salt, and ice cubes in a blender until smooth. Chill in the refrigerator until ready to serve.
In a large bowl, combine milk, heavy cream, sugar, cardamom, saffron threads, and rose water. Soak the bread slices in this mixture for 10 minutes.
Preheat oven to 375°F (190°C). Arrange soaked bread on a baking sheet and bake for 8 10 minutes or until golden brown. Remove from oven and let cool slightly.
To assemble the Shahi Tukra, place two pieces of fried bread on each plate, drizzle with the milk mixture, and top with a generous scoop of Vegetable Biryani. Garnish with fresh coriander leaves and serve with Mango Lassi.
