  • 4 boneless, skinless chicken breasts

Instructions

  1. Preheat oven to 425°F (220°C). In a large mixing bowl, whisk together the cornmeal, gluten free all purpose flour, baking powder, salt, sugar, and black pepper.
  2. In another bowl, combine the buttermilk, eggs, and melted butter. Pour the wet ingredients into the dry ingredients, stirring until just combined.
  3. Heat 2 tablespoons of vegetable oil in a large oven safe skillet over medium heat. Once hot, add the chicken breasts and cook for 4 5 minutes per side or until browned. Remove from the skillet and set aside.
  4. Pour the remaining vegetable oil into the skillet, then carefully pour in the cornbread batter, spreading it evenly around the chicken breasts.
  5. Place the skillet in the preheated oven and bake for 20 25 minutes, or until a toothpick inserted into the cornbread comes out clean and the chicken is cooked through.
  6. Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped green onions and hot sauce, if desired.
