Ingredients
- 2 cups Sushi Rice
- 1 cup Fresh Shiitake Mushrooms, sliced
- 1/4 cup Soy Sauce
- 2 Tbsp Sesame Oil
- 1 Tbsp Mirin
- 1 Tbsp Sugar
- 1 tsp Salt
- To taste Ground Black Pepper
- 3 Sheets Nori Seaweed, cut into rectangles

Cook sushi rice according to package instructions and let it cool.

In a pan over medium heat, sauté sliced shiitake mushrooms in sesame oil until tender.

Add soy sauce, mirin, sugar, salt, and ground black pepper to the mushrooms and cook for 2-3 minutes until the liquid has reduced slightly.

Divide the cooked rice into 4 portions. Shape each portion into a triangle and press it gently between wet hands to form an onigiri.
