Instructions

  1. Preheat oven to 400°F (205°C). In a shallow dish, mix together parsley, basil, thyme, almond flour, Parmesan cheese, and salt and pepper. Pat chicken thighs dry with paper towels and press into herb mixture, coating evenly. Heat 2 tablespoons of butter in a large oven safe skillet over medium heat. Add chicken thighs, skin side down, and cook for 4 minutes or until browned. Flip and cook for another 3 minutes. Transfer skillet to preheated oven and bake for 20 25 minutes, or until internal temperature reaches 165°F (74°C). In a small saucepan, melt remaining butter over low heat. Add minced garlic and cook for 2 minutes, stirring constantly. Serve chicken thighs with garlic butter sauce poured over the top.
