Instructions
In a large pan, heat the vegetable oil and sauté onion and red bell pepper until tender.
Add the blended tomato paste to the pan, stirring continuously to prevent burning. Cook for about 5 minutes.
Add the chicken breasts to the tomato sauce, season with thyme, garlic powder, salt, and pepper. Cover and simmer for 20 minutes.
Meanwhile, rinse the rice under cold water until the water runs clear. Drain and set aside.
In a separate pot, combine the drained rice, chicken broth, tomato sauce, and salt to taste. Bring to a boil, then reduce heat to low, cover, and cook for 18 minutes.
Remove the chicken breasts from the pan and allow them to rest for a few minutes before slicing.
Serve the Jollof Rice with grilled chicken slices on top, garnished with fresh parsley.
