4 (6 oz each) beef sirloin steaks, about 1 inch thick
2 cups riced cauliflower, raw
1 cup mixed vegetables (bell peppers, carrots, and zucchini)
1/2 cup unsalted almonds, chopped
1/4 cup coconut cream
3 tbsp avocado oil
3 tbsp cayenne pepper
2 tsp ground ginger
2 tsp smoked paprika
1.5 tsp salt
1 tsp ground black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp ground nutmeg
1/4 tsp ground cloves
Instructions
In a small bowl, combine the cayenne pepper, ginger, smoked paprika, salt, black pepper, garlic powder, onion powder, nutmeg, and cloves to create the spice blend.
Coat each steak with half of the spice blend, ensuring full coverage. Allow the steaks to marinate for 30 minutes.
In a large skillet, heat 1 tablespoon of avocado oil over medium high heat. Sear each steak for 4 minutes per side or until desired doneness is reached. Remove from pan and let rest.
In the same skillet, add another tablespoon of avocado oil, then sauté the mixed vegetables for 5 minutes or until tender crisp.
In a separate pan, heat the remaining avocado oil over medium heat. Add the riced cauliflower and cook for about 5 minutes or until softened. Stir in the almonds and coconut cream, then continue to cook for another 2 minutes. Season with salt and black pepper to taste.
Slice each steak against the grain and serve alongside the cauliflower rice and vegetables.
