  • 2 cups all
  • purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 2 medium potatoes, boiled and mashed
  • 1/2 cup peas, cooked
  • 1/2 cup onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon garam masala
  • Water, as needed

Instructions

  1. In a large bowl, mix together the flour and salt. Gradually add vegetable oil and mix until the dough forms. Add water if necessary to achieve the desired consistency. Knead well and set aside to rest for 30 minutes. In another bowl, combine the mashed potatoes, peas, onion, cilantro, coriander powder, cumin powder, red chili powder, and garam masala. Mix well and set aside. Divide the dough into equal sized balls, then roll them out into thin circles. Place a spoonful of filling in the center of each circle and fold the edges to seal. Press gently to shape into samosas. Heat oil in a deep frying pan and deep fry the samosas until they turn golden brown. Drain on paper towels to remove excess oil.
