Instructions

  1. In a small bowl, whisk together fish sauce, lime juice, coconut sugar or palm sugar, minced garlic, and grated ginger. Set aside.
  2. Heat a large skillet over medium high heat. Add the shrimp and cook until pink and cooked through, about 3 4 minutes per side. Remove from heat and let cool slightly. Slice into bite sized pieces.
  3. Assemble lettuce wraps by placing a few shrimp slices, cucumber, red bell pepper, bean sprouts, basil leaves, and cilantro leaves in the center of each butter lettuce leaf. Drizzle with the prepared sauce and top with chopped peanuts.
  4. Serve immediately and enjoy!
