Ingredients
1 cup chopped kale (sukuma wiki)
2 cups mashed potatoes
1/2 cup chopped onions
2 tbsp oil
Salt and pepper, to taste
1/4 tsp cumin powder
1/4 tsp coriander powder
Instructions
In a large pan, heat the oil over medium heat.
Add the chopped onions and sauté until they become translucent.
Add the kale to the pan and cook for 5 minutes until it starts to soften.
Season with salt, pepper, cumin powder, and coriander powder, mixing well.
Remove from heat and let the mixture cool for a few minutes.
In a separate bowl, mix the mashed potatoes with the cooked kale mixture. Adjust seasoning if needed.
Lay out a large piece of plastic wrap on your work surface.
Place the potato kale mixture in the center and shape it into a log.
Wrap the log tightly in the plastic wrap and twist the ends to secure it.
Chill in the refrigerator for at least 30 minutes.
Slice into rounds and pan fry until golden brown on both sides.
