  • range eggs 2. 8 oz Portuguese chourico sausage, sliced 3. 1 medium ripe avocado, peeled and pitted 4. 1 cup mixed pickled vegetables (carrots, radishes, cauliflower) 5. 2 tbsp olive oil 6. Salt and pepper to taste 7. Optional: fresh parsley for garnish
