  • 1 cup almond flour
  • 1 cup coconut sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsweetened almond milk
  • 1/3 cup coconut oil, melted
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon pure vanilla extract
  • 2 cups canned black cherries in syrup, drained but reserve the syrup
  • 8 oz dairy
  • free dark chocolate
  • 1 cup dairy
  • free whipped cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9 inch cake pans and line with parchment paper.
  2. In a large bowl, whisk together almond flour, coconut sugar, cocoa powder, baking soda, and salt. Add almond milk, melted coconut oil, apple cider vinegar, and vanilla extract. Mix until well combined.
  3. Pour batter evenly into prepared cake pans and bake for 25 30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely on wire racks.
  4. While the cake layers are cooling, heat reserved cherry syrup in a saucepan over medium heat. Once hot, add the drained cherries and cook for 10 15 minutes, stirring occasionally until the mixture thickens slightly.
  5. Chop dairy free dark chocolate into small pieces and place in a microwave safe bowl. Heat in 30 second intervals, stirring between each, until melted and smooth. Allow to cool slightly.
  6. Once the cakes are completely cooled, assemble the cake by placing one layer on a serving plate. Spread half of the cherry mixture evenly over the layer, followed by half of the ganache. Repeat with the second cake layer.
  7. Top with the remaining cherry mixture and ganache. Finish with a generous dollop of dairy free whipped cream.
  8. Refrigerate for at least 1 hour to set before serving.
