Instructions

  1. Begin by preparing the herb rice pilaf. In a large pot, combine the rinsed basmati rice, water or vegetable broth, chopped parsley, chopped dill, turmeric, salt, and pepper. Bring to a boil, then reduce heat and simmer covered for 15 minutes. Remove from heat and let sit for an additional 5 minutes.
  2. While the rice is cooking, preheat your oven to 400°F (200°C). In a small baking dish, layer the walnuts evenly over the bottom. Drizzle with half of the olive oil and season with salt and pepper. Place in the oven and bake for approximately 10 minutes or until the walnuts are golden brown and crispy. Remove from the oven and set aside.
  3. For the Garlic Mint Hummus, add the chickpeas, tahini, minced garlic, mint leaves, lemon juice, salt, and pepper to a food processor or high speed blender.
