  • 12 sheets Phyllo Pastry (Vegan)
  • 1 cup Walnuts, finely chopped
  • 1/2 cup Sugar, granulated
  • 1 tbsp Cinnamon
  • 3/4 cup Unsalted Vegan Butter, melted
  • 1 cup Water
  • 1 cup Sugar, for syrup
  • 1 tsp Lemon Zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a small bowl, combine chopped walnuts, 1/2 cup sugar, and cinnamon. Mix well and set aside.
  3. Unroll phyllo dough onto a clean surface. Cover with a damp cloth to prevent drying out.
  4. Lay one sheet of phyllo in the baking dish, brushing lightly with melted butter. Repeat with 7 more sheets, buttering between each layer.
  5. Sprinkle half of the walnut mixture evenly over the buttered phyllo layers.
  6. Place another sheet of phyllo on top and brush with butter. Continue layering with 6 more sheets of phyllo and the remaining walnut mixture.
  7. Carefully roll the layers together to create a tight roll, tucking in the ends as you go. Place seam side down in the prepared baking dish.
  8. Brush the entire surface with butter and cut into 2 inch wide rolls.
  9. Bake for 30 minutes, or until golden brown.
  10. While baking, prepare syrup by combining water, sugar, and lemon zest in a saucepan. Bring to a boil and simmer for 5 minutes.
  11. Remove the baked rolls from the oven and pour the hot syrup over them evenly. Let sit for 30 minutes before serving.
